宜兴的黄泥春笋,老家人只叫毛笋。在三月份初春时期上市二十天。每年我都在这个时间买个十斤、二十斤回来。炖鸡汤或者做腌笃鲜。去年没买上,因为疫情。今年呢,还是这个问题,快递发不出来。我有点着急,这常州土鸡和咸肉,都准备好了,只差毛笋。先下单试试看,实在发不了再退吧,不然又要下市了,还要等一年。

The bamboo shoot in Yixing is called “Mao Sun”.

It is on the market for just twenty days in the early spring of March.

I will buy five to ten kilos every year at this time to make chicken soup and “Yan Du Xian”(a nutritious soup known as the great comfort food of the Yangtze River Delta in early spring, main ingredient includes salted pork and bamboo shoot) .

I didn’t manage to do that last year because of the pandemic. The delivery is still an issue this year. I am a bit anxious as I’ve already got the chicken and salted pork ready.

Anyway, I would just make my order now to see if I can get them. Otherwise I will have to wait another year.

腌笃鲜,两人份,自己备忘录记下来,不然长久不烧也会忘(2016年)

1,五片咸肉,五六块仔排,姜片,料酒,肉洗好放水里煮30分钟;

2,笋两只,泥巴确实是黄的。剥皮削好,切成片或块(别切太大,咬得不小心容易牙龈烫脱皮),先在其他锅里的开水里煮两分钟,过水(不然会有苦涩味道)。然后放到煮了30分钟的排骨咸肉汤锅里!煮一会儿,加点盐,这里要注意啊马莉,咸肉本来就是咸的,要尝尝味道,小心齁死!

3,放一些百叶结,一张豆皮切一切就好了!(OMG,要有横山桥百叶就好了,会馊没法快递)煮几分钟就好了!

4,然后,盛出来,上面放一些小葱花!好了,鲜鲜的汤就出来了!千万别放什么花椒胡椒之类的,浪费了我宜兴山上春天挖的黄泥毛笋!


Recipe for Yan Du Xian, (for 2 person). I got to write it down as my own memo, otherwise it will be forgotten after a long time (2016)

1), 5 pieces of salted pork, 5 pieces of chopped pork ribs, ginger slices, cooking wine...... Wash the meat and boil it in water for 30 minutes;

2), two Bamboo shoots. Peel the shell off, cut into slices or pieces (don't make the pieces too big). First put them in another pot of boiling water for two minutes (otherwise it will have a bitter taste). Take them out and put them in the ribs and salted meat soup that's been boiling for 30 minutes. Cook for a while with small to mild fire, add some salt. Be careful here. Salted meat is already very salty. Taste the soup when adding salt and make sure you don’t add too much.

3). Put in some “Bai Ye” (bean curd sheet) knots. It only takes a few more minutes to cook! (OMG, it would be great to have Changzhou Hengshanqiao “Bai Ye”. But it can’t be delivered as it would get sour and uneatable.)

4). Then, dish it out and sprinkle some chopped Spring Onions on top! There you go, delicious soup! Do not put in pepper or anything like that. That would ruin my Yixing Yellow mud Spring Bamboo shoots dug from yellow mud in mountains only Yixing has.
